Bilberry crepes PDF Print E-mail
A quick, easy and  scrumptious dessert, make them tonight!

Makes 12 crepes

100g/ 4oz plain flour
pinch of salt
1 egg
300ml/ ½ pint milk
1 tbs of oil or melted butter
1 bottle of the Best of Taste Co Blackcurrant, Blueberry or Black cherry with kirsch coulis, or Bilberry sauce

1. Sift the flour and salt into a large bowl and make and crack the egg into awell in the centre, add the oil or melted butter and half the milk. Using a wooden spoon gently draw the flour into the liquid until it is all incorporated and then beat to a smooth batter.
2. Pour into a jug and let stand for half an hour before use.
3. Thoroughly heat then lightly grease a frying pan. Add 2 tbs of batter and tilt the pan so it covers the base. Brown lightly and then flip over (as theatrically as you like) and cook on the other side.
4. Serve warm and drizzled with the Best of Taste Company coulis or sauce of your choice.
