Raspberry Peach Melba PDF Print E-mail

Warm peaches and cold vanilla ice cream brought together with the Best of Taste Company Raspberry coulis make an unbeatable combination with minimum fuss!

Serves 4

4 whole peaches
50g/ 2oz butter
25g/ 1oz light brown sugar
4 tbs water
1 bottle the Best of Taste Co Raspberry coulis

1. Preheat the oven to 200°C/ 400°F/ Gas 6. Heat half the butter in a frying pan until it begins to bubble. Add the whole peaches and fry for 5 minutes, turning until golden. Arrange the peaches stalk side down in the same pan or on a baking sheet and roast for 12-15 minutes until tender.
2.  Remove from the oven and return to the direct heat, adding the rest of the butter. When beginning to bubble, add the sugar and turn the fruit until it has caramelised. At which point stir in the water thoroughly and remove from the heat.
3. Serve immediately with a scoop of farmhouse vanilla ice cream and a generous drizzle of the Best of Taste Company Raspberry coulis. Perhaps decorate with fresh raspberries.
