Strawberry Meringues PDF Print E-mail

These meringues, accompanied by a dollop of whipped cream and the wonderful contrast of some tangy Best of Taste Company fruit coulis, be it Summer fruits, Strawberry, Raspberry, Blackcurrant or Mango and Passionfruit, manage simultaneously to be hugely simple to prepare, and show- stoppers to behold! 

Makes 8

2 large egg Whites
110g/4oz white Caster sugar
200ml/7 fl oz Whipping cream (whipped)

1 bottle of the Best of Taste Co Summer fruits coulis

1. Preheat the oven to 150°C/300°F/Gas 2
2. Place the whites in a bowl and, using an electric hand whisk, whisk on a low speed for 1 minute and then gradually increase the speed until the whites are forming stiff peaks.
3. Gradually incorporate the sugar using the whisk at high speed so that you end up with a stiff shiny mixture.
4. Using a dessertspoon, place 8 dollops of the mixture onto a baking tray which has been covered in greaseproof paper. Hollow out the centres a little using the back of a spoon.
5. Place in the preheated oven and immediately reduce heat to 140°C/275°F/Gas 1 and leave to cook for 30 minutes. After which, turn of the oven and leave meringues to dry out in the oven for at least an hour.
6. Once ready to serve, spoon whipped cream into the hollowed- out centres and pour over the Best of Taste Company fruit coulis as recommended
