Summer Fruits Terrine PDF Print E-mail

This neutral creamy terrine background is truly brought to life by the tangy refreshing taste of fresh summer berries and currants.

Serves 6-8

425ml/ ¾ pint double cream
75g/ 3oz white caster sugar
1½ x 11g sachets of gelatine powder
3 tsp vanilla extract
425ml/ ¾ greek yogurt
1 bottle the Best of Taste Co Raspberry, Summerfruits or Blackcurrant coulis
Raspberries to garnish

1. Mix together the gelatine and 4 tablespoons of cream in a cup and leave to soak for 10 minutes.
2. Place the remaining cream and the sugar in a saucepan, heating gently until dissolved. Add the soaked gelatine and whisk for a few seconds and then remove from the heat.
3. Put the yogurt and vanilla into a large bowl and mix together and then thoroughly stir in the gelatine mixture.
4. Pour into a 4x4x4 inch plastic container. Once cool, cover and refrigerate for a few hours until set.
5. Turn out onto a plate and cut up into portions. Serve with the wonderfully refreshing coulis and some raspberries to garnish.
